Dirty Dough Rowlett Bringing a Sweet Twist to Dalrock Road
Along Dalrock Road, where traffic moves steadily between Rowlett and Rockwall, a small dessert shop is quickly becoming a stop for anyone craving something sweet after dinner.
Dirty Dough Rowlett opened in October 2025 and has been introducing the area to a dessert concept centered around thick, stuffed cookies packed with flavor. For owner Harsimran Gill, the shop represents more than just another business venture. It is part of a larger journey built on years of experience in customer service and retail.

Gill has spent more than a decade operating businesses that serve customers every day, including gasoline stations, convenience stores, and Rita’s Italian Ice locations. Over time, he developed a passion for creating places where people could stop in, enjoy a treat, and walk out smiling.
When the opportunity to expand into the Dallas-Fort Worth area appeared, he did not hesitate.
“We were drawn to DFW because it’s really booming,” Gill said. “We visited family here several times and just fell in love with the area.”
A Location Between Two Communities
Finding the right location was key. Gill wanted a place that could welcome families from both Rowlett and Rockwall. Dalrock Road offered exactly that. The busy corridor sits between the two communities, making it an ideal place for a dessert shop that could become a convenient stop for families, students, and late-night snack runs.
Dirty Dough Rowlett officially opened its doors in mid-October of 2025. Like many new businesses, the early months have been filled with both excitement and challenges.
“It’s been a roller coaster ride for sure,” Gill said. “That’s part of opening any new business. Every day brings something new.”
What Makes Dirty Dough Different
While the name sometimes makes people think they are walking into a donut shop, Dirty Dough specializes in something else entirely. Stuffed cookies. The brand’s philosophy is simple and reflected in its motto: “It’s what’s inside that counts.”
Rather than focusing only on how cookies look on the outside, Dirty Dough builds its desserts around rich fillings and layered flavors. Each cookie is designed to deliver a surprise in the center.
The shop also offers more than just cookies. Customers can also choose from bars, waffle bites, cinnamon rolls, milkshakes, specialty drinks, and ice cream desserts. The menu rotates monthly with new flavors and creations that give returning customers something new to try.
Some of the current favorites include the Chocolate Chip cookie, Cookies and Cream cookie, PB Overload cookie, Churro waffle bites, and the Dirty Dr., one of the shop’s signature drinks.

Another popular option is Dirty Scoops, which combines cookies and ice cream into one indulgent dessert. New additions are also on the horizon. The brand plans to introduce gluten friendly options and Rice Krispies treats during the second quarter of 2026.
A First Customer They Will Never Forget
Every new business has a moment that makes the opening feel real. For Gill, that moment happened almost immediately. Shortly after opening the doors on the first day, he stepped outside and spotted someone nearby. On impulse, he asked if the man wanted to be the store’s first customer.
“He said, ‘Hell yeah,’” Gill recalled.
The moment turned into more than just a first sale. The customer later shared a post about the new shop opening in several Facebook groups, helping spread the word across the community. For a brand-new business, that kind of support can make a big difference.
Building a Name in the Community
One of the biggest challenges so far has been simply helping people understand what Dirty Dough is.
“Many people think we’re a donut shop because of the name,” Gill said. “But once they come in and try the cookies, they get it.”
The shop is also looking for ways to connect with the community. Dirty Dough Rowlett offers catering, bulk cookie orders, and fundraising opportunities such as spirit nights for schools and local organizations. The business is also preparing to relaunch its mobile app after resolving vendor issues. Once available, customers who download the app and create an account will receive a reward for a free cookie with a purchase.
A Sweet Stop for the Dalrock Corridor
As Dirty Dough Rowlett approaches its first full year in business, Gill hopes the shop continues to grow into a neighborhood favorite. For families heading home after dinner, students looking for a late-night treat, or anyone craving something indulgent, the goal is simple.
